So far I have tested ONE recipe and I have gotten TWO more!
Here are the next two candidates.
1. Ron's Pancakes
2 cups milk
2 cups flour
2 tablespoons baking powder
1 large egg or 2 small eggs
1 teaspoon salt
...1 teaspoon vanilla (optional)
Mix well & let sit for a few minutes and mix again.
Cook on griddle hot enough to make water dance (around 375°-400°)
Flip once edges are golden.
Enjoy!
2. Dan's Lemon and Blueberry Pancakes
2 Cups flour
2 teaspoons baking powder
1teaspoon baking soda
¼ teaspoon salt
¼ cup sugar
...
1/3 cup butter melted (or less)
1 cup whole milk ricotta
1 ½ cups milk
2 eggs separated
zest of 2 lemons
powdered sugar to garnish
1 pint strawberries, sliced
Whisk wet ingredients, lemon zest, and egg yolks
Combine dry ingredients.
Mix these two together.
Mix whites to soft peak and fold in.
Cook over peanut or safflower oil. Make small pancakes, about ¼ cup.
